No oven needed for these coconut no-bake cookies!
Chocolate, oatmeal & coconut no-bake cookies
Ingredients
- 2 cups sugar
- 2 ounces unsweetened chocolate
- 1/4 teaspoon salt
- 2 tablespoons light corn syrup
- 2/3 cup milk
- 1 teaspoon vanilla 2 tablespoons butter or margarine
- 1-1/2 cups Quaker Oats (quick or old fashioned), uncooked
- 1 cup shredded or flaked coconut
- 1/2 cup chopped nuts
Instructions
- Prepare a flat surface or cookie sheets by lining with waxed paper.
- Combine sugar, chocolate, salt, syrup, and milk in a medium-sized saucepan.
- Cook over medium heat, stirring frequently, until the mixture reaches 236 degrees F, or until a soft ball forms when dropped into cold water.
- Remove from heat.
- Stir in vanilla, butter, oats, coconut, and nuts.
- Drop immediately by teaspoonfuls onto waxed paper.
- Cool and let set for about 1 hour.
