No oven needed for these coconut no-bake cookies!

Originally called Chocolate Nut Drops when this recipe came out in the mid-60s, you make these ridiculously easy and delicious no-bake cookies by creating a candy-like chocolate base, then stir in oats, coconut and nuts.

Ingredients

  • 2 cups sugar
  • 2 ounces unsweetened chocolate
  • 1/4 teaspoon salt
  • 2 tablespoons light corn syrup
  • 2/3 cup milk
  • 1 teaspoon vanilla 2 tablespoons butter or margarine
  • 1-1/2 cups Quaker Oats (quick or old fashioned), uncooked
  • 1 cup shredded or flaked coconut
  • 1/2 cup chopped nuts

Instructions

  1. Prepare a flat surface or cookie sheets by lining with waxed paper.
  2. Combine sugar, chocolate, salt, syrup, and milk in a medium-sized saucepan.
  3. Cook over medium heat, stirring frequently, until the mixture reaches 236 degrees F, or until a soft ball forms when dropped into cold water.
  4. Remove from heat.
  5. Stir in vanilla, butter, oats, coconut, and nuts.
  6. Drop immediately by teaspoonfuls onto waxed paper.
  7. Cool and let set for about 1 hour.
