These flavorful and colorful gelatin sugar cookies need just a few simple ingredients. Best of all, one base dough can make up to five different flavors — you choose your favorite jello mixes to stir in. Then just refrigerate, slice, and bake a fresh batch of these tiny treats anytime!

Colorful gelatin sugar cookies

Ingredients

  • 3/4 cup shortening, part soft butter
  • 1/2 cup sugar
  • 3 ounces gelatin, any fruit flavor
  • 2-1/2 cups Gold Medal flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Heat oven to 350 degrees (F).
  2. Thoroughly mix the shortening, sugar, gelatin, eggs and vanilla.
  3. Blend in dry ingredients, and mix until just combined.
  4. Shape into two equal-sized logs (each about 1-1/2-inches wide) and roll in colored sprinkles, pushing the roll slightly so the decorations embed themselves in the dough.
  5. Wrap each cookie dough log in plastic wrap.
  6. Refrigerate for 4 hours or until firm.
  7. Unwrap and cut into 1/4 inch slices.
  8. Place each disc 2 inches apart on ungreased baking sheets.
  9. Bake 10-14 minutes, making sure to not overcook.
  10. Remove from oven before the cookies brown.
  11. Remove to wire racks to cool.
  12. Repeat recipe with alternate Jell-O flavors to make different colors, or make one large batch of dough (omitting gelatin) and divide into equal portions, which may be colored individually with the gelatin mix.

Notes

Alternate method: Heat oven to 400 degrees (F). Roll dough into 3/4 inch balls. Place dough balls 3-inches apart on ungreased baking sheet. Flatten each with bottom of a glass dipped in sugar. Add colored sprinkles into edges, if desired.

Ingredients

1/2 cup butter
1 cup sugar
2 eggs
1 tbsp. cream
2-1/2 cups cake flour, sifted before measuring
2 tsp. baking powder
1/2 tsp. salt
2 tsp. vanilla

Directions

Cream butter, add sugar and beat until light. Add beaten egg, cream and vanilla. Sift flour, baking powder and salt together, and add to dough.

Form into rolls and chill well. Slice and place slices on cookie sheet, sprinkling each with sugar or 1/2 walnut if desired. Bake in 400 degree oven 8 to 10 minutes.
