Easter Rice Krispies treats

Yield: 24 squares, 2 x 2 inches
Prep Time: 5 minutes
Cook Time: 5 minutes
Additional Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1/2 cup margarine or butter
  • 1 pkg (10 oz, about 40) regular marshmallows or 4 cups miniature marshmallows
  • 5 cups Kellogg's Rice Krispies cereal

Instructions

  1. Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted.
  2. Cook over low heat 3 minutes longer, stirring constantly. Remove from heat.
  3. Add Rice Krispies cereal. Stir until well-coated.
  4. Using a buttered spatula or waxed paper [or parchment paper], press mixture evenly into buttered 13 x 9 x 2 inch pan.
  5. Cut into squares when cool. To make other shapes, see directions [below].

Note: Best results are obtained when using fresh marshmallows.

How to make Rice Krispie treat bunnies, eggs & springtime cutouts

To make bunnies

For 7-inch bunny, prepare one recipe of Marshmallow Treats. Using buttered hands, shape 3 1/2 cups of warm mixture for body and 2 cups of mixture for head. Join head and body with toothpicks.

Shape remaining mixture into balls for cotton tail and paws. Attach to body with toothpicks.

Make ears from colored paper. Cut 2 slits in head to attach ears. Decorate as desired. Note: Recipe can be shaped into two smaller bunnies.

To make eggs

Portion warm Marshmallow Treats mixture using 1/2 cup dry measure.

With buttered hands, shape into eggs. Frost or decorate as desired. Makes 10 eggs.

To make springtime cutouts

Press warm Marshmallow Treats mixture into buttered shallow pan in a layer about 1/2 inch thick.

When slightly cooled, cut into springtime shapes, or use your favorite cookie cutters. Frost or decorate as desired.
