In the style of the use-only-one-pan quickbread and cake mixes like the popular Snackin’ Cake, the makers of Bisquick came out with this easy one-pan pumpkin bread recipe back in 1983.

It uses the baking mix in place of the flour, salt, baking soda, and some of the fat (there’s oil in the recipe, and shortening is already in the Bisquick).

If you like nuts — particularly walnuts or pecans — they make a delicious addition to this pumpkin bread loaf.

That means you need only 7 or 8 ingredients to make a quick, delicious and cinnamony pumpkin bread that’s as good for breakfast as it is for dessert!

And you thought Bisquick only made pancakes! OnePan means it’s easy, Bisquick means it’s delicious. Just mix and bake in one pan.

Easy one pan pumpkin bread

Cook Time: 55 minutes
Additional Time: 5 minutes
Total Time: 1 hour 20 minutes

If you like nuts - particularly walnuts or pecans - they make a delicious addition to this pumpkin bread loaf.

Ingredients

  • 1/3 cup vegetable oil
  • 1 cup canned pumpkin
  • 3 eggs
  • 2-1/3 cups Bisquick baking mix
  • 1-1/4 cups sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Heat oven to 350 (F).
  2. Generously grease bottom of loaf pan, 9x5x3-inches.
  3. Stir all ingredients except raisins in pan with fork until moistened; beat vigorously 1 minute.
  4. Stir in raisins. If desired, add chopped walnuts or pecans.
  5. Bake until a wooden pick inserted in center comes out clean, 45 to 55 minutes.
  6. Cool 5 minutes.
  7. Run knife or metal spatula around sides of loaf to loosen; remove from pan. (If loaf sticks to pan, press gently on sides of loaf with knife or metal spatula.)

Notes

High Altitude: Heat oven to 375 (F). Decrease baking mix to 2 cups and sugar to 1 cup. Add 1/4 cup Gold Medal all-purpose flour. Increase eggs to 4.
