Here by popular request are 12 of our favorite recipes for Impossible Pies made with Bisquick baking mix. These are the pies that do the impossible by making their own crust almost like magic — with no need to roll out pastry.
And they’re so versatile, so people-pleasing and so quick and easy, you’ll want to serve them morning, noon and night for a free and easy summer in the sun.

Impossible quesadilla pie recipe

Impossible Cheeseburger Pie
1 pound ground beef
1-1/2 cups chopped onion
1-1/2 cups milk
3/4 cup baking mix
3 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
2 tomatoes, sliced
1 cup shredded Cheddar or process American cheese
Heat oven to 400. Grease pie plate, 10 x 11/2 inches. Cook and stir beef and onion over medium heat until beef is brown; drain. Spread in plate.
Beat milk, baking mix, eggs, salt and pepper until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake 25 minutes. Top with tomatoes; sprinkle with cheese.
Bake until knife inserted in center comes out clean, 5 to 8 minutes. Cool 5 minutes. 6 to 8 servings.
High Altitude (3500 to 6500 feet): Increase first bake time to 30 minutes.

Impossible Taco Pie recipe
1 lb ground beef
1/2 cup chopped onions
1 (1-1/4 oz.) envelope taco seasoning mix
1 (4 oz.) can chopped green chilies, drained
1-1/4 cups milk
3/4 cup Bisquick baking mix
3 eggs
2 tomatoes, sliced
1 cup shredded Monterey Jack or Cheddar cheese
Heat oven to 400 degrees. Grease pie plate, 10 x 1 1/2 inches. Cook and stir beef and onion until brown; drain. Stir in seasoning mix. Spread in plate; top with chilies.
Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour in plate. Bake 25 minutes. Top with tomatoes and cheese. Bake until knife inserted in center comes out clean, 8 to 10 minutes longer. Cool 5 minutes.
Serve with sour cream, chopped tomatoes, shredded lettuce and shredded cheese, if desired. 6 to 8 servings.

Impossible Zucchini-Tomato Pie recipe
2 cups chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup grated Parmesan cheese
1-1/2 cups milk
3 eggs
3/4 cup Bisquick mix
1/2 tsp salt
1/4 tsp pepper
Heat oven to 400 degrees. Grease 10-inch quiche dish. Layer zucchini, tomato, onion in dish.
Beat remaining ingredients until smooth 15 seconds in blender on high or 1 minute with hand mixer. Pour over vegetables in dish.
Bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes.

I’ve recently started making these impossible pies for our dinners. Very easy but they do need a bit of tweaking with extra herbs or spices,etc. Still good though. Hubby even likes them ( which is unusual he’s picky lol). If you go to betty crocker’s website they give the nutritional information and a number are low carb. We really like the ham and swiss pie. Add a vegetable and you’re good to go

I was so happy to find this site, I always loved the Impossible Pie! I wish I could find the Chicken Broccoli Cheese recipe.
Chicken Broccoli Cheese Impossible Bake
Ingredients
2 packages (10 ounces each) of frozen chopped broccoli, thawed and drained.
3 cups shredded Cheddar cheese (12 ounces)
2 cups cut-up cooked chicken.
1 large onion, chopped (1 cup)
1 cup Original Bisquick™ mix
2 cups milk
1 teaspoon salt
1/2 teaspoon pepper
4 eggs
Steps
Heat oven to 400°. Grease the bottom and sides of the rectangular baking dish, 13x9x2 inches, with shortening. Sprinkle broccoli, 2 cups of cheese, chicken, and onion in a baking dish. Stir the remaining ingredients until blended. Pour over the chicken mixture. Bake uncovered for 40 to 45 minutes or until the knife inserted in the center comes out clean. Sprinkle with the remaining 1 cup of cheese. Bake for 1 to 2 minutes or until cheese is melted. Let stand for 5 minutes before cutting.
I love the Impossible Quiche, my mother started making it in the ’70 and I still make it today, it’s the best, not a lot of fuss.
