Marshmallow bunny birthday cake recipe
Ingredients
2-1/4 cup of self-rising cake flour
3/4 cup of butter (part shortening if you desire)
1-1/2 cup of sugar
1/4 cup of egg yolks (about three)
1 teaspoon of vanilla
3/4 cup of milk
3/8 cup of egg whites (about 3), beaten stiff
Directions
Sift and measure out the flour, and set aside. Cream together the sugar and butter, then add the egg yolks until light and fluffy. Add also the vanilla extract. Measure out the milk and add to the creamed mixture alternately with about 1/2 cup of the flour at a time. Stir smooth and by hand after each addition. Fold in the egg whites — do not over-mix.
Divide the batter into a deep, round, layer cake pans, greased, and the bottoms lined with wax paper (and the paper greased). Bake at 350 F for 25 to 30 minutes, then cool. Put the layers together with currant jelly, and frost with double boiler frosting colored pink. Decorate with marshmallow bunnies.
Note: Use an electric mixer only for creaming the butter, etc, and beating the eggs. Add Presto cake flour and milk by hand.

How to make the marshmallow bunnies
Ingredients
1 pound of marshmallows
Pink gumdrops
Red food coloring
Water
Toothpicks
Directions
Purchase 1 pound of marshmallows. With a toothpick dipped in red food coloring, diluted with water, draw eyes, nose and a mouth on 18 to 20 of the marshmallows. Draw 3 buttons on 10 more marshmallows.
For the arms, cut 5 marshmallows into quarters by cutting the marshmallow in two and then splitting each half. Run a toothpick through the head and body. Run the toothpick through each arm and run the other end diagonally through the body. The legs are formed by two marshmallows placed side by side, a toothpick diagonally through each up into the body.
Cut out petal-shaped pieces of paper 1-1/2 inches long and about 5/8 of an inch wide at the middle, pointed at one end and not quite pointed at the other end. With a red pencil, color ears as shown. Fold through the middle with colored side in. With scissors, snip 2 slits in the top of the bunny head and insert ears.
Use bunny faces as candle holders. Press a small candle into each. Press bunnies into frosting around outside of cake. Where hands meet, press in small pink gumdrops.
