Yield: Make 4 cups, or 8 side salads
Prep Time: 30 minutes
Cook Time: 5 minutes
Additional Time: 4 hours
Total Time: 4 hours 35 minutes

Here is the 1960s version of Jello’s popular Under-the-Sea salad — a combination of lime gelatin, cream cheese and canned pears — all molded and colorful and ready for your Bewitched or Brady Bunch TV marathon!

Ingredients

  • 3 ounces Jell-O Lime or Lemon-Lime Gelatin
  • 1/4 teaspoon salt
  • 1 cup boiling water
  • 1 pound pear halves
  • 1 tablespoon lemon juice
  • 6 ounces cream cheese
  • 1/8 teaspoon ginger

Instructions

  1. Dissolve Jell-O Gelatin and salt in boiling water.
  2. Drain pears, measuring 3/4 cup syrup; add water, if necessary.
  3. Dice pears and set aside.
  4. Add pear syrup and lemon juice to gelatin.
  5. Measure 1-1/4 cups into a 1-quart mold.
  6. Chill until set, but not firm.
  7. Meanwhile, soften cheese until creamy.
  8. Gradually add remaining gelatin, blending until smooth.
  9. Add ginger.
  10. Chill until very thick.
  11. Fold in pears.
  12. Spoon into mold.
  13. Chill until firm.
  14. Unmold on crisp lettuce.
